  • Dark chocolate (70% cocoa): Provides a rich chocolate flavor.
  • Eggs: Separated to create a light, airy texture.
  • Caster sugar: Adds sweetness to balance the bitterness of the dark chocolate.
  • Double cream: Whipped to add creaminess and lightness.
  • Vanilla extract: Adds a subtle sweetness and depth of flavor.

Instructions

  1. Melt the chocolate: Break the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pan of simmering water (making sure the bowl doesn’t touch the water) and stir occasionally until fully melted. Remove from heat and let it cool slightly.
  2. Separate the eggs: Separate the egg yolks from the whites. Set aside the whites in a large mixing bowl. Stir the egg yolks into the cooled chocolate mixture until well combined.
  3. Whip the egg whites: Using a whisk or electric mixer, whisk the egg whites until they form stiff peaks. Gradually add the sugar while whisking until the mixture is glossy.
  4. Whip the cream: In another bowl, whip the double cream with the vanilla extract until soft peaks form.
  5. Combine the ingredients: Gently fold the whipped cream into the chocolate mixture, followed by the egg whites. Be careful not to overmix, as you want to keep the mousse light and airy.
  6. Chill the mousse: Spoon the mousse into individual ramekins or dessert glasses and refrigerate for at least 1 hour, or until set.
  7. Serve and garnish: Before serving, you can garnish with chocolate shavings, fresh berries, or a dollop of whipped cream.
