Instructions
- Melt the chocolate: Break the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pan of simmering water (making sure the bowl doesn’t touch the water) and stir occasionally until fully melted. Remove from heat and let it cool slightly.
- Separate the eggs: Separate the egg yolks from the whites. Set aside the whites in a large mixing bowl. Stir the egg yolks into the cooled chocolate mixture until well combined.
- Whip the egg whites: Using a whisk or electric mixer, whisk the egg whites until they form stiff peaks. Gradually add the sugar while whisking until the mixture is glossy.
- Whip the cream: In another bowl, whip the double cream with the vanilla extract until soft peaks form.
- Combine the ingredients: Gently fold the whipped cream into the chocolate mixture, followed by the egg whites. Be careful not to overmix, as you want to keep the mousse light and airy.
- Chill the mousse: Spoon the mousse into individual ramekins or dessert glasses and refrigerate for at least 1 hour, or until set.
- Serve and garnish: Before serving, you can garnish with chocolate shavings, fresh berries, or a dollop of whipped cream.
