Description
Jamie Oliver’s 5 Ingredients Curry Chicken is a streamlined version of a classic curry dish, designed to be quick and easy without sacrificing flavor. This recipe uses five main ingredients—chicken, curry paste, coconut milk, fresh cilantro, and rice—to create a rich, creamy curry that comes together in no time. It’s a perfect introduction to making homemade curry with minimal effort.
Ingredients
- Chicken thighs (500g / 1 lb): Skinless and boneless, cut into bite-sized pieces.
- Curry paste (4 tbsp): Choose your favorite red or green curry paste for the base flavor.
- Coconut milk (400ml / 14 oz can): Adds creaminess and richness to the sauce.
- Fresh cilantro (a handful): Chopped, for garnish and added freshness.
- Basmati rice (200g / 1 cup): Cooked, to serve alongside the curry.
Instructions
1. Cook the Rice:
- Cook the rice: Start by cooking the basmati rice according to the package instructions. Set aside once cooked and keep warm.
2. Prepare the Chicken and Sauce:
- Sauté the curry paste: In a large frying pan or saucepan, heat a little oil over medium heat. Add the curry paste and stir for 1-2 minutes until fragrant.
- Add the chicken: Stir in the chicken pieces, coating them with the curry paste. Cook for 5-7 minutes, until the chicken is browned on all sides.
- Pour in the coconut milk: Add the coconut milk to the pan, stirring to combine. Bring the mixture to a gentle simmer, then reduce the heat and cook for 15-20 minutes, until the chicken is cooked through and the sauce has thickened.
3. Serve:
- Garnish and serve: Once the curry is ready, remove it from the heat and stir in the fresh cilantro. Serve the curry hot, over basmati rice.
