Step 1: Prepare the chicken
- Preheat your oven to 200°C (400°F). Remove the chicken from its packaging and pat it dry with paper towels. Season the chicken with salt and pepper, both inside and out.
Step 2: Prepare the lemon and garlic
- Cut the lemon in half and peel the garlic cloves. Insert the lemon halves and garlic into the cavity of the chicken. This will infuse the chicken with flavor as it roasts.
Step 3: Add the rosemary and oil
- Tuck the rosemary sprigs under the chicken skin or place them inside the cavity with the lemon and garlic. Drizzle the olive oil over the chicken and rub it all over to coat the skin evenly.
Step 4: Roast the chicken
- Place the chicken breast side up in a roasting pan. Roast the chicken in the preheated oven for 1 hour and 20 minutes, or until the skin is golden and crispy and the internal temperature reaches 75°C (165°F).
Step 5: Rest and serve
- Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes. Carve the Jamie Oliver 5 Ingredients Roast Chicken and serve hot with your favorite sides.
