Ingredients

  • Chicken breasts (2 large): Boneless and skinless.
  • Puff pastry (1 sheet, thawed): Store-bought or homemade.
  • Cream cheese (2 tablespoons): Adds creaminess to the filling.
  • Fresh spinach (a handful): Optional, for added flavor and nutrition.
  • Egg (1, beaten): For brushing the pastry.
  • Olive oil (1 teaspoon): For seasoning the chicken.
  • Salt and black pepper: Season the chicken and filling.
  • Herbs (e.g., thyme or parsley, 1 teaspoon): Optional, for extra flavor.

Instructions

Step 1: Prepare the chicken

  • Preheat the air fryer to 180°C (350°F).
  • Rub the chicken breasts with olive oil, salt, pepper, and optional herbs. Cook in the air fryer for 5–6 minutes until partially cooked. Let cool slightly before wrapping in pastry.

Step 2: Prepare the filling

  • If using cream cheese and spinach, mix them together with a pinch of salt and pepper. Spread the mixture over one side of each chicken breast.

Step 3: Wrap the chicken in pastry

  • Roll out the puff pastry on a floured surface if necessary. Cut the pastry into pieces large enough to wrap around each chicken breast.
  • Place each chicken breast in the center of a pastry piece, filling side up. Wrap the pastry around the chicken, sealing the edges by pinching or pressing with a fork.

Step 4: Brush with egg wash

  • Brush the wrapped pastry with beaten egg to ensure a golden, glossy finish.

Step 5: Cook in the air fryer

  • Line the air fryer basket with baking paper or a liner. Place the wrapped chicken in the basket, seam-side down. Cook at 180°C (350°F) for 15–20 minutes, or until the pastry is golden brown and cooked through.

Step 6: Serve

  • Let the chicken rest for 2–3 minutes before serving. Slice in half to reveal the filling, and serve with your favorite sides.
