Jamie Oliver’s Apple and Cinnamon Cake is a spiced apple cake made with fresh apples and cinnamon, giving it a warm and slightly spicy flavor. The apples make the cake wonderfully moist, while the cinnamon adds a cozy touch. This cake is often topped with a sprinkle of powdered sugar or a simple glaze, making it ideal for dessert, tea time, or even breakfast.
Preheat your oven to 180°C (160°C fan) or 350°F. Grease a 20cm round cake tin and line the bottom with parchment paper for easy removal.
In a mixing bowl, sift together the self-raising flour, baking powder, and ground cinnamon. Set aside.
In a separate bowl, cream the softened butter and caster sugar together using an electric mixer or whisk until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract to enhance the flavor of the cake.
Gently fold the flour mixture into the wet mixture until just combined. Add the milk to achieve a smooth, soft batter.
Fold the diced apples into the batter, ensuring they are evenly distributed throughout the mixture.
Pour the batter into the prepared cake tin and smooth the top with a spatula.
Bake in the preheated oven for 45-50 minutes, or until a skewer inserted into the center comes out clean. The top should be golden brown and the cake should feel springy to the touch.
Allow the cake to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.
Once the cake is completely cool, dust the top with icing sugar or cinnamon sugar for a decorative touch.
