Ingredients

  • Sausages (8 good-quality beef sausages): The star of the dish, choose your favorite variety of sausages.
  • Potatoes (1 kg, peeled and chopped): Use starchy potatoes like Maris Piper for a fluffy mash.
  • Butter (2 tablespoons): Adds richness and creaminess to the mashed potatoes.
  • Milk (100 ml): Helps achieve a smooth, creamy texture in the mash.
  • Olive oil (1 tablespoon): For frying the sausages to a golden brown.
  • Onions (2 large, thinly sliced): Key to making a rich, flavorful gravy.
  • Beef or vegetable stock (300 ml): Forms the base of the onion gravy.
  • Plain flour (1 tablespoon): Thickens the gravy.

Instructions

  1. Cook the sausages: Heat the olive oil in a skillet over medium heat. Add the sausages and cook for 15-20 minutes, turning occasionally, until they are golden brown and cooked through. Remove from the pan and keep warm.
  2. Prepare the potatoes: While the sausages are cooking, place the chopped potatoes in a large pot of salted water. Bring to a boil and cook for 15 minutes or until the potatoes are tender.
  3. Make the gravy: In the same skillet used for the sausages, add the sliced onions. Cook over medium heat for 10 minutes until they are soft and caramelized. Stir in the flour and cook for 1 minute, then gradually add the stock while whisking to prevent lumps. Simmer for 5-7 minutes until the gravy thickens.
  4. Mash the potatoes: Drain the potatoes and return them to the pot. Add the butter, milk, salt, and pepper, then mash until smooth and creamy.
  5. Serve: Plate the mashed potatoes, top with sausages, and generously pour the onion gravy over the top. Serve immediately.
