Instructions
Step 1: Prepare the cherry layer
If fresh cherries are used, pit and halve them. In a saucepan, combine the cherries, cherry jam, and sugar. Cook over medium heat for 5-7 minutes until the cherries soften and release their juices. Set aside to cool.
Step 2: Prepare the custard
Warm the custard slightly and stir in the grated dark chocolate until fully melted and combined. Let the mixture cool to room temperature.
Step 3: Assemble the trifle
- Base Layer: Cut the chocolate sponge cake into chunks and layer them at the bottom of the trifle dish. Drizzle with cherry juice or Kirsch to moisten.
- Cherry Layer: Spoon the cherry mixture over the sponge, ensuring an even layer.
- Custard Layer: Pour the chocolate custard over the cherries, spreading it evenly.
Step 4: Whip the cream
In a mixing bowl, whip the double cream with the icing sugar until soft peaks form. Spread the whipped cream over the custard layer.
Step 5: Garnish
Sprinkle the top with shaved dark chocolate and garnish with whole cherries if desired.
Step 6: Chill and serve
Refrigerate the trifle for at least 2 hours to allow the flavors to meld. Serve chilled and enjoy!
