Jamie Oliver’s Blueberry and Banana Muffins are a soft, moist muffin that combines mashed bananas with fresh blueberries. The natural sweetness of the banana complements the tartness of the blueberries, making these muffins a healthier option for anyone looking for a lighter, fruit-packed treat. They are easy to make and perfect for on-the-go snacks or a sweet treat at any time of the day.
Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4. Line a 12-hole muffin tin with muffin cases.
In a large bowl, sift together the plain flour, baking powder, and a pinch of salt. Stir in the caster sugar to combine.
In a separate bowl, mash the bananas until smooth.
To the mashed bananas, add the melted butter, eggs, milk, and vanilla extract. Whisk until well combined.
Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Be careful not to overmix, as this can make the muffins dense.
Gently fold the blueberries into the batter, making sure not to crush them.
Use a spoon or ice cream scoop to divide the batter evenly among the muffin cases, filling each about two-thirds full.
Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and a skewer inserted into the center comes out clean.
Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.
