Ingredients
- Crusty bread (ciabatta or baguette, 1 loaf): Sliced for the base.
- Ripe tomatoes (4–5 medium): Chopped into small pieces.
- Garlic (2 cloves): For rubbing and flavoring.
- Fresh basil leaves (a handful): Torn or finely chopped.
- Extra virgin olive oil (3 tablespoons): Adds richness and flavor.
- Balsamic vinegar (1 tablespoon, optional): For a tangy kick.
- Salt and black pepper: To season.
Optional Toppings:
- Mozzarella or burrata: For a creamy addition.
- Avocado slices: Adds a modern twist.
- Chili flakes: For a spicy kick.
Instructions
Step 1: Prepare the bread
- Slice the bread into 1-inch thick slices. If using a ciabatta, cut it into smaller, manageable pieces.
- Preheat a grill pan or oven to medium heat. Lightly drizzle the bread slices with olive oil and toast them for 2–3 minutes on each side until golden and crispy.
Step 2: Prepare the tomato topping
- In a mixing bowl, combine the chopped tomatoes, basil leaves, a drizzle of olive oil, and a pinch of salt and black pepper. Add balsamic vinegar if desired for extra flavor. Toss gently to mix.
Step 3: Rub the bread with garlic
- While the bread is still warm, rub one side of each slice with a garlic clove for a subtle, aromatic flavor.
Step 4: Assemble the bruschetta
- Spoon the tomato mixture generously over each slice of toasted bread. Arrange on a serving plate.
Step 5: Serve
- Drizzle the assembled bruschetta with more olive oil and garnish with additional basil leaves if desired. Serve immediately.
