Description

This tart features a base of crisp pastry filled with sweet caramelized onions, creamy goat’s cheese, and a rich egg custard. It’s baked to golden perfection, offering a balance of sweet, savory, and tangy flavors in every bite.


Ingredients

For the Pastry

  • Ready-to-Roll Shortcrust Pastry (1 sheet): For convenience, or make your own.
  • Plain Flour (for dusting): To prevent sticking while rolling.

For the Filling

  • Onions (3 large, thinly sliced): Sweet and flavorful when caramelized.
  • Butter (25g): For caramelizing the onions.
  • Olive Oil (1 tbsp): Helps soften the onions.
  • Brown Sugar (1 tbsp): Enhances the sweetness of the onions.
  • Balsamic Vinegar (1 tbsp): Adds depth and tang to the caramelized onions.
  • Eggs (3, large): Helps set the filling.
  • Double Cream (150ml): Creates a rich custard.
  • Goat’s Cheese (150g, sliced or crumbled): The star ingredient for creaminess and tang.
  • Fresh Thyme (1 tsp, chopped): Adds a subtle herbal note.
  • Salt and Pepper (to taste)

Optional Toppings

  • Rocket Leaves: For serving, add a peppery freshness.
  • Drizzle of Honey: Pairs beautifully with the goat’s cheese.

Instructions

Step 1: Prepare the pastry

Preheat your oven to 200°C (180°C fan) or 400°F. Roll out the shortcrust pastry on a floured surface and line a tart tin. Trim any excess pastry and prick the base with a fork.

Step 2: Blind bake the pastry

Line the pastry with baking parchment and fill with baking beans. Bake in the preheated oven for 10 minutes. Remove the beans and parchment, then bake for an additional 5 minutes until the base is golden. Set aside to cool slightly.

Step 3: Caramelise the onions

In a large skillet, melt the butter with olive oil over medium heat. Add the sliced onions and cook for 10-15 minutes, stirring occasionally, until soft and golden. Add the brown sugar and balsamic vinegar, stirring well. Cook for another 5 minutes until the onions are deeply caramelized. Remove from heat and let cool slightly.

Step 4: Prepare the custard

In a mixing bowl, whisk together the eggs and double cream. Season with salt and pepper.

Step 5: Assemble the tart

Spread the caramelized onions evenly over the base of the tart. Pour the egg and cream mixture over the onions. Top with slices or crumbles of goat’s cheese and sprinkle with fresh thyme.

Step 6: Bake the tart

Bake the tart in the preheated oven for 25-30 minutes, or until the filling is set and the top is golden.

Step 7: Serve

Allow the tart to cool slightly before slicing. Serve warm or at room temperature with a side of rocket leaves or a drizzle of honey.
