Ingredients

  • Celery (1 bunch, chopped): The star of the dish, providing a fresh, mildly sweet flavor.
  • Potatoes (2 medium, peeled and chopped): Adds body and creaminess to the soup.
  • Onion (1 large, chopped): Adds a savory base to the soup.
  • Garlic (2 cloves, minced): Provides depth and flavor.
  • Olive oil (2 tbsp): For sautéing the vegetables.
  • Vegetable stock (1 liter): Forms the base of the soup and enhances the flavor.
  • Salt and pepper: To taste.
  • Lemon juice (1 tbsp, optional): Adds brightness to the soup.
  • Fresh parsley or celery leaves (for garnish): Adds a fresh and colorful finish.

Instructions

  1. Sauté the onions and garlic: Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for 5-7 minutes until softened and translucent.
  2. Add the celery and potatoes: Stir in the chopped celery and potatoes, and cook for another 3-4 minutes to combine the flavors.
  3. Add the stock: Pour in the vegetable stock and bring the mixture to a boil. Reduce the heat to a simmer and cook for 20-25 minutes, or until the celery and potatoes are tender.
  4. Blend the soup: Remove the pot from the heat and use a hand blender to blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a countertop blender and blend until smooth.
  5. Season and add lemon juice: Stir in the lemon juice, if using, and season the soup with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and garnish with freshly chopped parsley or celery leaves. Serve hot with crusty bread or as a light meal on its own.
