Ingredients
- Celery (1 bunch, chopped): The star of the dish, providing a fresh, mildly sweet flavor.

Instructions
- Sauté the onions and garlic: Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for 5-7 minutes until softened and translucent.
- Add the celery and potatoes: Stir in the chopped celery and potatoes, and cook for another 3-4 minutes to combine the flavors.
- Add the stock: Pour in the vegetable stock and bring the mixture to a boil. Reduce the heat to a simmer and cook for 20-25 minutes, or until the celery and potatoes are tender.
- Blend the soup: Remove the pot from the heat and use a hand blender to blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a countertop blender and blend until smooth.
- Season and add lemon juice: Stir in the lemon juice, if using, and season the soup with salt and pepper to taste.
- Serve: Ladle the soup into bowls and garnish with freshly chopped parsley or celery leaves. Serve hot with crusty bread or as a light meal on its own.
