Instructions
- Preheat your oven to 200°C (400°F).
- Caramelize the onions by frying them in butter over medium heat until they turn golden brown and soft. This should take about 15 minutes.
- Add the flour to the onions and cook for an additional minute to thicken the mixture slightly.
- Stir in the milk gradually, mixing well until you have a creamy onion mixture. Season with salt and pepper to taste.
- Roll out the shortcrust pastry, dividing it into two portions – one for the base and one for the top.
- Line your pie dish with one portion of the pastry, pressing it gently into the edges.
- Fill the pie with the caramelized onion mixture and grated cheese, spreading evenly.
- Cover with the remaining pastry, crimping the edges to seal. Make a small hole in the center to allow steam to escape.
- Brush with beaten egg for a golden finish and bake for 30–35 minutes or until the pastry is golden brown.
- Let the pie cool for a few minutes before slicing and serving.
