Ingredients

- Eggs (4 large): Beaten, to create a smooth and creamy filling.
- Double cream (200ml / ¾ cup): Adds richness to the egg mixture.
- Olive oil (1 tbsp): For sautéing the onions.
- Salt and pepper: To taste, for seasoning.

Instructions
1. Prepare the Pastry:
- Preheat the oven: Set the oven to 180°C (350°F).
- Roll out the pastry: If using rolled-out shortcrust pastry, roll it to fit your quiche tin. Line the tin with the pastry, pressing it into the edges.
- Blind bake: Prick the base with a fork, line it with baking parchment, and fill with baking beans. Blind bake for 10-15 minutes, then remove the parchment and beans and bake for another 5 minutes until lightly golden. Let it cool slightly.
2. Caramelize the Onions:
- Heat the oil: In a frying pan, heat the olive oil over medium heat.
- Cook the onions: Add the sliced onions and cook for about 10-12 minutes, stirring occasionally, until they are soft and caramelized. Set aside to cool slightly.
3. Make the Filling:
- Whisk the eggs and cream: In a mixing bowl, whisk together the eggs, double cream, salt, and pepper until well combined.
- Add the cheese and onions: Stir in the grated Cheddar cheese and caramelized onions, mixing everything evenly.
4. Assemble the Quiche:
- Pour the filling: Pour the egg, cheese, and onion mixture into the pre-baked pastry case.
- Optional garnish: Sprinkle fresh thyme leaves on top for added flavor.
5. Bake the Quiche:
- Bake: Place the quiche in the oven and bake for 25-30 minutes, or until the filling is set and the top is golden and slightly puffed.
- Cool slightly: Let the quiche cool for 5-10 minutes before slicing.
