Jamie Oliver’s Cheese and Onion Quiche is a classic quiche recipe featuring a flaky shortcrust pastry base filled with sweet onions, a creamy egg mixture, and plenty of cheese. Ingredients

  • Shortcrust pastry (1 sheet): Ready-made, for a simple and flaky base.
  • Onions (2 medium): Thinly sliced, for caramelized sweetness.
  • Cheddar cheese (150g / 5 oz): Grated, for a rich, cheesy filling.
  • Eggs (4 large): Beaten, to create a smooth and creamy filling.
  • Double cream (200ml / ¾ cup): Adds richness to the egg mixture.
  • Olive oil (1 tbsp): For sautéing the onions.
  • Salt and pepper: To taste, for seasoning.
  • Fresh thyme (optional): A few sprigs, to add a fragrant touch to the quiche.

Instructions

1. Prepare the Pastry:

  • Preheat the oven: Set the oven to 180°C (350°F).
  • Roll out the pastry: If using rolled-out shortcrust pastry, roll it to fit your quiche tin. Line the tin with the pastry, pressing it into the edges.
  • Blind bake: Prick the base with a fork, line it with baking parchment, and fill with baking beans. Blind bake for 10-15 minutes, then remove the parchment and beans and bake for another 5 minutes until lightly golden. Let it cool slightly.

2. Caramelize the Onions:

  • Heat the oil: In a frying pan, heat the olive oil over medium heat.
  • Cook the onions: Add the sliced onions and cook for about 10-12 minutes, stirring occasionally, until they are soft and caramelized. Set aside to cool slightly.

3. Make the Filling:

  • Whisk the eggs and cream: In a mixing bowl, whisk together the eggs, double cream, salt, and pepper until well combined.
  • Add the cheese and onions: Stir in the grated Cheddar cheese and caramelized onions, mixing everything evenly.

4. Assemble the Quiche:

  • Pour the filling: Pour the egg, cheese, and onion mixture into the pre-baked pastry case.
  • Optional garnish: Sprinkle fresh thyme leaves on top for added flavor.

5. Bake the Quiche:

  • Bake: Place the quiche in the oven and bake for 25-30 minutes, or until the filling is set and the top is golden and slightly puffed.
  • Cool slightly: Let the quiche cool for 5-10 minutes before slicing.
