Ingredients
- Potatoes (1kg): Use floury potatoes like Maris Piper or Russet for fluffy mashed potatoes.
- Cheddar Cheese (200g, grated): A strong cheese that adds a rich flavor.
- Milk (150ml): For a creamy, smooth texture in the mashed potatoes.
- Butter (50g): Adds richness to the mashed potatoes.
- Mustard (1 teaspoon): Adds a subtle tang to complement the cheese.
- Onion (1 large, finely chopped): Adds sweetness and depth to the pie.
- Egg Yolk (1): For brushing the top to give the pie a golden, crispy finish.
- Salt and Pepper: To taste, for seasoning.
Instructions
Step 1: Boil the Potatoes
- Peel and cut the potatoes into chunks. Place them in a large pot of salted water and bring to a boil.
- Cook the potatoes for 15-20 minutes or until tender.
- Drain the potatoes and return them to the pot to steam dry for a few minutes.
Step 2: Sauté the Onions
- While the potatoes are boiling, melt a knob of butter in a frying pan over medium heat.
- Add the finely chopped onion and sauté for 10 minutes, or until soft and golden. Set aside.
Step 3: Mash the Potatoes
- Add the butter, milk, and mustard to the boiled potatoes.
- Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.
Step 4: Add the Cheese and Onions
- Stir the grated cheddar cheese and sautéed onions into the mashed potatoes, mixing well to combine.
- Reserve a small amount of cheese to sprinkle on top of the pie later.
Step 5: Assemble the Pie
- Preheat your oven to 200°C (180°C fan).
- Transfer the mashed potato mixture into a greased pie dish, spreading it out evenly.
- Sprinkle the remaining cheese over the top.
- Brush the top with a little egg yolk to help create a golden crust during baking.
Step 6: Bake the Cheese and Potato Pie
- Place the pie in the preheated oven and bake for 20-25 minutes, or until the top is golden and crispy.
- Remove from the oven and let it cool slightly before serving.
