Jamie Oliver’s Cheese and Potato Pie is a simple yet flavorful dish made with mashed potatoes, various cheeses, and topped with a crispy, golden finish. It’s a perfect comfort food that’s both satisfying and versatile, offering a rich, creamy texture inside and a crispy top. This pie is great as a vegetarian main or as a side dish to accompany meat or vegetables.

Ingredients

  • Potatoes (1kg): Use floury potatoes like Maris Piper or Russet for fluffy mashed potatoes.
  • Cheddar Cheese (200g, grated): A strong cheese that adds a rich flavor.
  • Milk (150ml): For a creamy, smooth texture in the mashed potatoes.
  • Butter (50g): Adds richness to the mashed potatoes.
  • Mustard (1 teaspoon): Adds a subtle tang to complement the cheese.
  • Onion (1 large, finely chopped): Adds sweetness and depth to the pie.
  • Egg Yolk (1): For brushing the top to give the pie a golden, crispy finish.
  • Salt and Pepper: To taste, for seasoning.

Instructions

Step 1: Boil the Potatoes

  • Peel and cut the potatoes into chunks. Place them in a large pot of salted water and bring to a boil.
  • Cook the potatoes for 15-20 minutes or until tender.
  • Drain the potatoes and return them to the pot to steam dry for a few minutes.

Step 2: Sauté the Onions

  • While the potatoes are boiling, melt a knob of butter in a frying pan over medium heat.
  • Add the finely chopped onion and sauté for 10 minutes, or until soft and golden. Set aside.

Step 3: Mash the Potatoes

  • Add the butter, milk, and mustard to the boiled potatoes.
  • Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.

Step 4: Add the Cheese and Onions

  • Stir the grated cheddar cheese and sautéed onions into the mashed potatoes, mixing well to combine.
  • Reserve a small amount of cheese to sprinkle on top of the pie later.

Step 5: Assemble the Pie

  • Preheat your oven to 200°C (180°C fan).
  • Transfer the mashed potato mixture into a greased pie dish, spreading it out evenly.
  • Sprinkle the remaining cheese over the top.
  • Brush the top with a little egg yolk to help create a golden crust during baking.

Step 6: Bake the Cheese and Potato Pie

  • Place the pie in the preheated oven and bake for 20-25 minutes, or until the top is golden and crispy.
  • Remove from the oven and let it cool slightly before serving.
