Ingredients

For the Soup:

  • Chicken thighs or breasts (2 large): Provides tender and flavorful meat.

  • Carrots (2 medium, sliced): Adds natural sweetness.
  • Celery (2 sticks, diced): Adds aromatic depth.
  • Onion (1 large, finely chopped): For the base flavor.
  • Garlic (2 cloves, minced): Enhances the broth’s flavor.
  • Egg noodles (150g): Adds texture and heartiness.
  • Fresh parsley (a handful, chopped): For garnish and flavor.
  • Olive oil (1 tablespoon): For sautéing the vegetables.
  • Salt and black pepper: To season.

Optional Additions:

  • Lemon juice (1 tablespoon): Adds brightness.
  • Chili flakes (a pinch): For a spicy kick.
  • Ginger (1 teaspoon, grated): Enhances the flavor and makes it soothing.

Instructions

Step 1: Cook the chicken

  • Place the chicken thighs or breasts in a large pot. Cover with chicken stock and bring to a boil. Reduce the heat and simmer for 15–20 minutes, or until the chicken is cooked through. Remove the chicken from the pot, shred it using two forks, and set aside.

Step 2: Sauté the vegetables

  • In the same pot, heat olive oil over medium heat. Add the onions, garlic, carrots, and celery. Sauté for 5–7 minutes until the vegetables are softened and fragrant.

Step 3: Combine ingredients

  • Return the shredded chicken to the pot. Add the egg noodles and simmer for 5–7 minutes, or until the noodles are cooked. Adjust the seasoning with salt and black pepper to taste.

Step 4: Add finishing touches

  • Stir in fresh parsley and optional lemon juice for a bright, fresh flavor. If desired, sprinkle chili flakes for a hint of spice.

Step 5: Serve

  • Ladle the soup into bowls and serve hot, garnished with extra parsley or a wedge of lemon.
