Ingredients

  • Salt and pepper: To taste.

Instructions

Step 1: Roast the chicken wings and vegetables

  • Preheat the oven to 200°C (400°F).
  • In a roasting tray, combine the chicken wings, onion, carrot, celery, garlic, and thyme.
  • Drizzle with olive oil, season with salt and pepper, and toss to coat.
  • Roast for 30–40 minutes until the wings are golden and the vegetables are caramelized.

Step 2: Create the gravy base

  • Transfer the roasted wings and vegetables to a saucepan.
  • Place the roasting tray on the stove over medium heat, add a splash of chicken stock, and scrape up the browned bits (deglaze).
  • Pour this liquid into the saucepan.

Step 3: Thicken the gravy

  • Sprinkle the flour into the saucepan and stir well to coat the ingredients.
  • Gradually add the chicken stock, whisking constantly to prevent lumps.

Step 4: Simmer and strain

  • Simmer the mixture for 10–15 minutes, stirring occasionally, until thickened and flavorful.
  • Strain the gravy through a sieve into a clean saucepan or bowl, pressing down on the solids to extract every bit of flavor.

Step 5: Adjust seasoning and serve

  • Taste the gravy and adjust the seasoning with salt and pepper as needed.
