In a large mixing bowl, beat the cream cheese and powdered sugar together until smooth. Add the melted chocolate and vanilla extract, mixing until well combined. In a separate bowl, whip the double cream to soft peaks, then fold it into the chocolate-cream cheese mixture to keep it light.
Step 4. Assemble the Cheesecake
Pour the chocolate filling over the chilled crust in the springform pan. Use a spatula to smooth the top, creating an even layer. Cover and refrigerate for at least 4 hours, or until set. For best results, chill overnight.
Step 5. Add Toppings and Serve
Before serving, remove the cheesecake from the pan and transfer it to a serving plate. Top with chocolate shavings, a dusting of cocoa powder, fresh berries, or whipped cream for added decoration and flavor.
