Ingredients

  • All-purpose flour – 250g, for a light and fluffy texture.
  • Caster sugar – 150g, adds sweetness without overpowering.
  • Butter – 125g, melted for a rich flavor.
  • Eggs – 2 large, for binding and structure.
  • Milk – 200ml, ensures moist muffins.
  • Baking powder – 2 teaspoons, helps the muffins rise.
  • Vanilla extract – 1 teaspoon, adds a subtle flavor.
  • Chocolate chips – 150g, use milk, dark, or a mix of both.
  • Salt – A pinch, enhances the flavor.

Instructions

Step 1: Prepare the Muffin Tin

  • Preheat your oven to 180°C (350°F).
  • Line the muffin tin with paper cases to prevent sticking.

Step 2: Mix the Dry Ingredients

  • In a large mixing bowl, combine the flour, sugar, baking powder, and a pinch of salt.
  • Stir well to evenly distribute the ingredients.

Step 3: Combine the Wet Ingredients

  • In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until smooth.

Step 4: Make the Batter

  • Gradually pour the wet ingredients into the dry ingredients.
  • Gently fold the mixture together with a spatula or wooden spoon, being careful not to overmix.

Step 5: Add the Chocolate Chips

  • Fold the chocolate chips into the batter, reserving a few to sprinkle on top.

Step 6: Fill the Muffin Cases

  • Use a spoon or ice cream scoop to evenly distribute the batter into the prepared muffin cases, filling each about two-thirds full.

Step 7: Bake the Muffins

  • Sprinkle the reserved chocolate chips on top of each muffin.
