Instructions
Step 1: Prepare the Coffee and Chocolate
- Brew a strong cup of coffee, then let it cool to room temperature. Add a splash of dark rum or coffee liqueur if desired.
- Melt the dark chocolate over a double boiler or in the microwave in short bursts, stirring until smooth. Set aside to cool slightly.
Step 2: Prepare the Mascarpone Cream
- In a mixing bowl, beat the egg yolks and caster sugar until pale and fluffy.
- Add the mascarpone cheese and vanilla extract (if using), and gently fold until smooth and creamy.
Step 3: Whip the Cream and Fold into the Mixture
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the mascarpone mixture.
Step 4: Prepare the Egg Whites
- In another bowl, whisk the egg whites until soft peaks form, then carefully fold them into the mascarpone mixture for extra lightness.
Step 5: Layer the Tiramisu
- Dip each ladyfinger briefly into the cooled coffee, then arrange them in a single layer in the bottom of your serving dish or individual cups.
