  • Caster sugar (100g): Sweetens the mascarpone mixture.
  • Eggs (2 large, separated): Adds richness and helps bind the mascarpone layer.
  • Ladyfinger biscuits (200g): Provides the structure for the dessert.
  • Strong coffee (200ml, cooled): Soaks into the ladyfingers for a classic tiramisu flavor.
  • Cocoa powder (for dusting): Finishes the dessert with a rich cocoa layer.

Optional Additions

  • Vanilla extract (1 tsp): Adds a hint of sweetness and depth to the mascarpone layer.
  • Dark rum or coffee liqueur (1-2 tbsp): Adds a subtle kick to the coffee mixture.

Instructions

Step 1: Prepare the Coffee and Chocolate

  • Brew a strong cup of coffee, then let it cool to room temperature. Add a splash of dark rum or coffee liqueur if desired.
  • Melt the dark chocolate over a double boiler or in the microwave in short bursts, stirring until smooth. Set aside to cool slightly.

Step 2: Prepare the Mascarpone Cream

  • In a mixing bowl, beat the egg yolks and caster sugar until pale and fluffy.
  • Add the mascarpone cheese and vanilla extract (if using), and gently fold until smooth and creamy.

Step 3: Whip the Cream and Fold into the Mixture

  • In a separate bowl, whip the heavy cream until soft peaks form.
  • Gently fold the whipped cream into the mascarpone mixture.

Step 4: Prepare the Egg Whites

  • In another bowl, whisk the egg whites until soft peaks form, then carefully fold them into the mascarpone mixture for extra lightness.

Step 5: Layer the Tiramisu

  • Dip each ladyfinger briefly into the cooled coffee, then arrange them in a single layer in the bottom of your serving dish or individual cups.
  • Spread half of the mascarpone mixture over the ladyfingers.
  • Drizzle or spread a layer of melted chocolate over the mascarpone cream.

Step 6: Repeat the Layers
