Jamie Oliver Christmas Stuffing

Jamie Oliver Christmas Stuffing - recipe card

A classic Christmas stuffing with pork sausage, fresh herbs, and sweet fruit, baked until golden and crisp on top while staying moist and flavorful inside. The combination of sage, apricots, and cranberries creates a perfect balance of savory and sweet, ideal for pairing with roast turkey.

Ingredients

Scale
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb (450g) pork sausage meat
  • 1 cup (50g) fresh breadcrumbs
  • 1/2 cup (75g) dried apricots, chopped
  • 1/2 cup (60g) dried cranberries
  • 1/4 cup (15g) fresh flat-leaf parsley, chopped
  • 2 tbsp fresh sage, chopped
  • 1 tsp fresh thyme leaves
  • 1 large egg, beaten
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 cup (60ml) chicken stock

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 2-quart baking dish with a little olive oil.
  2. Heat the olive oil in a frying pan over medium heat. Add the onion and cook for 5-6 minutes until soft and translucent, then add the garlic and cook for 1 minute more until fragrant. Remove from heat and let cool slightly.
  3. In a large bowl, combine the sausage meat, breadcrumbs, apricots, cranberries, parsley, sage, thyme, salt, and pepper. Add the cooled onion mixture and mix well with your hands until evenly combined.
  4. Add the beaten egg and mix until the stuffing comes together. If the mixture feels dry, add a splash of chicken stock.
  5. Transfer the stuffing to the prepared baking dish and spread evenly. Pour the chicken stock over the top.
  6. Cover with foil and bake for 30 minutes, then remove the foil and bake for another 15 minutes until golden brown and crisp on top and the internal temperature reaches 165°F (74°C).
  7. Let the stuffing rest for 5 minutes before serving.

Notes
