To make one pot of soup (serves 4), gather the following ingredients:

  • 500g (1 lb) frozen peas (or fresh if available): Sweet and vibrant, forming the base of the soup.
  • 1 onion, finely chopped: Adds depth and sweetness.
  • 2 cloves garlic, minced: For an aromatic, flavorful base.
  • 1 large potato, peeled and diced: Adds creaminess to the soup when blended.
  • 1 liter (4 cups) vegetable stock: Provides a flavorful base for the soup.
  • A large handful of fresh mint leaves: Adds freshness and cools the soup.
  • 2 tbsp olive oil: For sautéing the onion and garlic.
  • Salt and pepper, to taste: For seasoning.
  • Cream or yogurt (optional, for garnish): Adds a creamy finish when serving.

Instructions

Step 1: Sauté the Onion and Garlic

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic and sauté for about 5 minutes, or until the onion is soft and translucent.

Step 2: Add the Potato and Stock

  1. Add the diced potato to the pot and stir to combine.
  2. Pour in the vegetable stock and bring the mixture to a boil. Reduce the heat and simmer for about 10-12 minutes, or until the potato is soft and cooked through.

Step 3: Add the Peas and Mint

  1. Stir in the peas and cook for another 3-4 minutes, just until they’re tender.
  2. Add the fresh mint leaves and stir to combine.

Step 4: Blend the Soup

  1. Remove the pot from the heat and allow the soup to cool slightly.
  2. Using a blender or an immersion blender, blend the soup until it’s smooth and creamy.
  3. Taste and season with salt and pepper to your liking.

Step 5: Serve

  1. Ladle the soup into bowls and, if desired, garnish with a drizzle of cream or yogurt and a few extra mint leaves.
  2. Serve hot or cold, depending on your preference.
