Ingredients

  • Sausages (6 good-quality beef or your favorite type): The heart of the dish, providing savory flavor.
  • Baby potatoes (500g, halved): Adds substance and texture to the dish.
  • Red onions (2, quartered): Brings sweetness and depth when roasted.
  • Red bell peppers (2, chopped): Adds a pop of color and natural sweetness.
  • Olive oil (2 tablespoons): For drizzling and helping everything roast beautifully.

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 200°C (400°F).
  • Line a large baking tray with parchment paper for easy cleanup.

Step 2: Prepare the vegetables

  • In a large mixing bowl, toss the baby potatoes, red onions, and red bell peppers with olive oil.
  • Season with a little salt and pepper for added flavor. Make sure everything is evenly coated.

Step 3: Arrange the tray

  • Spread the vegetables in an even layer on the baking tray.
  • Place the sausages on top of the vegetables, making sure they are evenly spaced for even cooking.

Step 4: Bake the tray
