Ingredients

Scale
  • 200g self-raising flour
  • 1 tsp baking powder
  • 1 tbsp caster sugar
  • 2 large eggs
  • 200ml milk
  • 1 tbsp melted butter (plus extra for greasing)
  • A pinch of salt

Instructions

  1. Mix the Dry Ingredients: In a large mixing bowl, combine the self-raising flour, baking powder, caster sugar, and a pinch of salt.
  2. Whisk the Wet Ingredients: In a separate jug, beat the eggs and milk together until well combined. Gradually whisk the wet mixture into the dry ingredients to form a smooth batter. Stir in the melted butter.
  3. Heat the Pan: Heat a non-stick frying pan or griddle over medium heat and grease it lightly with butter.
  4. Cook the Pancakes: Drop tablespoonfuls of the batter onto the hot pan, spacing them out. Cook for 1-2 minutes, until bubbles form on the surface. Flip the pancakes and cook for another 1-2 minutes on the other side, until golden and puffed up.
  5. Serve Warm: Serve the pancakes warm with butter, maple syrup, fresh fruit, or any topping of your choice.
