Ingredients

  • Spaghetti (400g): Whole wheat or regular, according to your preference.
  • Frozen Peas (200g): Adds sweetness and vibrant color to the sauce.
  • Spinach (200g): Fresh or frozen, packed with nutrients.
  • Basil (a large handful): Fresh basil leaves for a fragrant, herby flavor.
  • Garlic (2 cloves): Adds depth and aroma to the sauce.
  • Parmesan Cheese (50g): Finely grated, for a rich and creamy texture.
  • Lemon (1, zest and juice): Adds a zesty kick to brighten the dish.
  • Olive Oil (2 tablespoons): Extra virgin, for richness and flavor.
  • Salt and Pepper: Season the dish to your taste.
  • Optional: A small handful of pine nuts or almonds for extra texture and flavor.

Instructions

Step 1: Cook the Spaghetti

  • Bring a large pot of salted water to a boil.
  • Add the spaghetti and cook according to the package instructions until al dente.
  • Reserve a cup of the pasta cooking water, then drain the spaghetti and set aside.

Step 2: Prepare the Green Sauce

  • While the spaghetti is cooking, place the peas, spinach, basil, garlic, and half of the Parmesan cheese into a blender or food processor.
  • Add the lemon zest and juice, and a tablespoon of olive oil.
  • Blend until smooth, adding a bit of the reserved pasta water if needed to achieve a creamy consistency.
  • Season with salt and pepper to taste.

Step 3: Combine the Spaghetti and Sauce

  • In a large frying pan, heat the remaining tablespoon of olive oil over medium heat.
  • Pour the green sauce into the pan and warm it gently.
  • Add the cooked spaghetti to the pan and toss well to coat the pasta in the sauce.
  • If the sauce is too thick, add a little more of the reserved pasta water to reach your desired consistency.

Step 4: Serve the Super Green Spaghetti

  • Divide the spaghetti among serving plates.
  • Sprinkle the remaining Parmesan cheese over the top.
  • Garnish with a few fresh basil leaves and, if desired, some toasted pine nuts or almonds for extra crunch.
  • Serve immediately, with an extra drizzle of olive oil if you like.
