Ingredients

  • Sweet potatoes – 750g, peeled and chopped, for a naturally sweet and creamy base.

  • Vegetable stock – 1 liter, creates a rich and flavorful broth.
  • Coconut milk – 200ml, for creaminess and a hint of sweetness.
  • Olive oil – 2 tablespoons, for sautéing.

  • Ground cumin – 1 teaspoon, enhances the earthy flavors.
  • Salt and pepper – To taste, for seasoning.

Instructions

Step 1: Prepare the Ingredients

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and garlic, sautéing until softened and fragrant.

Step 2: Add the Sweet Potatoes and Spices

  • Stir in the chopped sweet potatoes, paprika, and ground cumin.
  • Cook for 2–3 minutes, allowing the spices to coat the vegetables.

Step 3: Add the Stock and Simmer

  • Pour in the vegetable stock, ensuring the sweet potatoes are fully submerged.
  • Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the sweet potatoes are tender.

Step 4: Blend the Soup

  • Use an immersion blender to blend the soup until smooth and creamy. Alternatively, transfer it to a blender in batches and blend until smooth.

Step 5: Add Coconut Milk and Season

  • Stir in the coconut milk and adjust the seasoning with salt, pepper, and chili flakes if desired.
  • Simmer for an additional 5 minutes to let the flavors combine.
