Instructions
Step 1: Prepare the Ingredients
Heat olive oil in a large pot over medium heat.
Add the chopped onion and garlic, sautéing until softened and fragrant.
Step 2: Add the Sweet Potatoes and Spices
Stir in the chopped sweet potatoes, paprika, and ground cumin.
Cook for 2–3 minutes, allowing the spices to coat the vegetables.
Step 3: Add the Stock and Simmer
Pour in the vegetable stock, ensuring the sweet potatoes are fully submerged.
Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the sweet potatoes are tender.
Step 4: Blend the Soup
Use an immersion blender to blend the soup until smooth and creamy. Alternatively, transfer it to a blender in batches and blend until smooth.
Step 5: Add Coconut Milk and Season
Stir in the coconut milk and adjust the seasoning with salt, pepper, and chili flakes if desired.
Simmer for an additional 5 minutes to let the flavors combine.
