Instructions
1. Sauté the Leeks:
- Melt the butter: In a large frying pan, melt the butter over medium heat.
- Cook the leeks: Add the sliced leeks and sauté for about 5 minutes, until softened and translucent.
2. Make the Sauce:
- Add the flour: Stir in the plain flour and cook for 1-2 minutes to form a roux.
- Slowly add the milk: Gradually pour in the milk, whisking continuously to prevent lumps.
- Stir in the cream: Add the double cream and Dijon mustard, whisking until the sauce is smooth and thickened.
- Season: Stir in the thyme (if using), and season with salt and pepper to taste.
3. Combine the Filling:
