Ingredients

  • Cooked ham (200g / 7 oz): Diced, adds savory depth to the pie.
  • Leeks (2 medium): Sliced, providing a sweet, mild onion flavor.
  • Puff pastry (1 sheet): Ready-made for convenience.
  • Butter (50g / 3.5 tbsp): For sautéing and making the sauce.
  • Plain flour (50g / 3.5 tbsp): Thickens the creamy sauce.
  • Milk (300ml / 1¼ cups): For the base of the sauce.
  • Double cream (100ml / ½ cup): Adds richness to the sauce.
  • Dijon mustard (1 tbsp): Adds tang and flavor to the sauce.
  • Fresh thyme (optional, 1 tsp): For a subtle herb flavor.
  • Salt and pepper: To taste, for seasoning.
  • Egg (1, beaten): For brushing the pastry to give it a golden finish.

Instructions

1. Sauté the Leeks:

  • Melt the butter: In a large frying pan, melt the butter over medium heat.
  • Cook the leeks: Add the sliced leeks and sauté for about 5 minutes, until softened and translucent.

2. Make the Sauce:

  • Add the flour: Stir in the plain flour and cook for 1-2 minutes to form a roux.
  • Slowly add the milk: Gradually pour in the milk, whisking continuously to prevent lumps.
  • Stir in the cream: Add the double cream and Dijon mustard, whisking until the sauce is smooth and thickened.
  • Season: Stir in the thyme (if using), and season with salt and pepper to taste.

3. Combine the Filling:

  • Add the turkey and ham: Stir the diced turkey and ham into the sauce, mixing well to coat everything evenly.
  • Simmer briefly: Let the mixture simmer for a few minutes, then remove from heat.

4. Assemble the Pie:

  • Preheat the oven: Set the oven to 200°C (400°F).
  • Fill the pie dish: Pour the turkey, ham, and leek filling into the pie dish, spreading it evenly.
  • Top with puff pastry: Roll out the puff pastry and lay it over the top of the filling. Trim any excess pastry and press the edges down to seal.
