Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Sear the Chicken: Heat a large skillet over medium-high heat and add olive oil. Once the oil is hot, add the chicken breasts. Cook for 5-6 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  3. Sauté the Garlic: In the same skillet, lower the heat to medium and add minced garlic. Sauté for about 1 minute, stirring frequently, until fragrant.
  4. Add the Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2 minutes to release their flavor.
  5. Make the Creamy Sauce: Pour in the chicken broth and heavy cream. Stir well, scraping up any brown bits from the bottom of the skillet. Bring the sauce to a simmer and cook for 5 minutes, allowing it to thicken slightly.
  6. Add the Spinach: Stir in the fresh spinach and cook for 2-3 minutes until wilted.
  7. Return the Chicken: Place the seared chicken breasts back into the skillet, spooning the sauce over them. Simmer for another 5 minutes to allow the chicken to absorb the flavors.
  8. Add Parmesan and Basil: Stir in the grated Parmesan cheese and fresh basil (if using), and adjust seasoning with salt and pepper to taste.
