Optional Toppings
- Fresh herbs (parsley, basil, or chives): For garnish.

- Drizzle of olive oil: For extra richness.
Instructions
Step 1: Sauté the Vegetables
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, cooking for 5 minutes until softened and translucent.
Step 2: Add the Zucchini
- Stir in the chopped zucchini and cook for 5-7 minutes, until the zucchini begins to soften and release some moisture.
- Add a pinch of salt and black pepper for seasoning, adjusting to taste.
Step 3: Add the Stock and Herbs
- Pour in the vegetable or chicken stock, bringing the mixture to a gentle simmer.
- Add fresh thyme or basil if desired, and let the soup simmer for 10-15 minutes, or until the zucchini is tender.
Step 4: Blend the Soup
- Remove the pot from heat and discard any herb stems if used.
- Use an immersion blender to puree the soup until smooth and creamy. Alternatively, you can carefully transfer the soup to a blender in batches, and then return it to the pot.
Step 5: Adjust Seasoning and Consistency
- Taste the soup and add more salt and pepper if needed.
- If you prefer a thinner consistency, add a little more stock or water.
Step 6: Serve and Garnish
- Ladle the soup into bowls and garnish with a drizzle of cream or yogurt, fresh herbs, or croutons as desired.
- Serve warm, or chill the soup in the refrigerator and serve cold.
