Ingredients

For the Soup

  • Kale (200g, chopped) – The star ingredient, rich in vitamins and minerals.
  • Olive Oil (2 tbsp) – For sautéing and adding richness.
  • Onion (1, finely chopped) – Adds depth of flavor.
  • Garlic (3 cloves, minced) – Enhances the taste.
  • Carrot (1, diced) – Provides natural sweetness.
  • Celery (1 stalk, diced) – Adds extra depth to the broth.
  • Potatoes (2 medium, peeled and diced, optional) – Adds creaminess and texture.
  • Vegetable or Chicken Stock (1 liter / 4 cups) – Forms the soup base.
  • Cannelini Beans (1 can, drained, optional) – Adds protein and creaminess.
  • Salt and Black Pepper (to taste) – Balances flavors.
  • Paprika (1 tsp, optional) – Adds warmth and smokiness.
  • Lemon Juice (1 tbsp, optional) – Enhances freshness.

Optional Additions

  • Chili Flakes (½ tsp) – For extra spice.
  • Parmesan Cheese (grated, for garnish) – Adds a cheesy touch.
  • Cooked Sausage or Chorizo (100g, sliced, optional) – For extra protein and depth.

Instructions

Step 1: Sauté the vegetables

Heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrot, and celery. Cook for 5 minutes, stirring occasionally, until the vegetables soften.

Step 2: Add potatoes and seasonings

If using potatoes, add them now along with paprika, salt, and black pepper. Stir well to coat the vegetables in the seasoning.

Step 3: Pour in the stock

Add the vegetable or chicken stock and bring the soup to a simmer. Let it cook for 10-15 minutes until the potatoes are tender.

Step 4: Add kale and beans

Stir in the chopped kale and drained beans. Simmer for another 5 minutes until the kale softens but remains vibrant green.

Step 5: Blend or keep chunky

For a creamy texture, use an immersion blender to blend part of the soup. If you prefer a chunky consistency, leave it as is.

Step 6: Finish with lemon juice

Add a squeeze of lemon juice to brighten the flavors. Adjust seasoning as needed.

Step 7: Serve

Ladle the soup into bowls and garnish with grated Parmesan or chili flakes if desired. Serve warm with crusty bread.
