Instructions
In a bowl, mix chopped rosemary, garlic, lemon zest, olive oil, salt, and pepper. Rub this mixture all over the lamb chops, ensuring they are evenly coated. Let them marinate for 15–30 minutes at room temperature.
Place a cast iron skillet or grill pan over medium-high heat. Add a small drizzle of olive oil and let it get hot.
Add the lamb chops to the pan in a single layer (do this in batches if needed). Sear for 2–3 minutes per side for medium-rare, or longer for your desired doneness. Flip only once to get a nice crust.
Transfer the chops to a plate and let them rest for 3–5 minutes. This helps the juices redistribute for maximum tenderness.
Optional: Drizzle with a splash of lemon juice or balsamic vinegar. Serve hot with your choice of sides.
