Ingredients
- Tomatoes (500g, chopped): Provides the base of the soup with a rich, fresh flavor.

- Olive oil (1 tbsp): For sautéing the onion and garlic.
- Vegetable stock (500ml): Forms the liquid base of the soup and adds flavor.
- Tomato purée (1 tbsp): Intensifies the tomato flavor and gives the soup a deeper color.
- Salt and pepper: To taste.
- Fresh basil or parsley (optional, for garnish): Adds a fresh, aromatic finish.
Instructions
- Sauté the onion and garlic: Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until softened but not browned.
- Add the tomatoes and tomato purée: Stir in the chopped tomatoes and tomato purée. Cook for 2-3 minutes to soften the tomatoes and bring out their flavor.
- Pour in the vegetable stock: Add the vegetable stock and bring the mixture to a boil. Reduce the heat and simmer for 3-4 minutes.
- Blend the soup: Remove the soup from the heat and use a hand blender to blend until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until creamy.
- Season and serve: Taste the soup and season with salt and pepper. Ladle into bowls and garnish with fresh basil or parsley if desired. Serve hot with crusty bread or a grilled cheese sandwich.
