It’s quickly blended to create a smooth, flavorful dish that’s ready in a flash. Ingredients

  • Tomatoes (500g, chopped): Provides the base of the soup with a rich, fresh flavor.
  • Onion (1 medium, chopped): Adds sweetness and depth to the soup.
  • Garlic (2 cloves, minced): Enhances the flavor with a savory kick.
  • Olive oil (1 tbsp): For sautéing the onion and garlic.
  • Vegetable stock (500ml): Forms the liquid base of the soup and adds flavor.
  • Tomato purée (1 tbsp): Intensifies the tomato flavor and gives the soup a deeper color.
  • Salt and pepper: To taste.
  • Fresh basil or parsley (optional, for garnish): Adds a fresh, aromatic finish.

Instructions

  1. Sauté the onion and garlic: Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until softened but not browned.
  2. Add the tomatoes and tomato purée: Stir in the chopped tomatoes and tomato purée. Cook for 2-3 minutes to soften the tomatoes and bring out their flavor.
  3. Pour in the vegetable stock: Add the vegetable stock and bring the mixture to a boil. Reduce the heat and simmer for 3-4 minutes.
  4. Blend the soup: Remove the soup from the heat and use a hand blender to blend until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until creamy.
  5. Season and serve: Taste the soup and season with salt and pepper. Ladle into bowls and garnish with fresh basil or parsley if desired. Serve hot with crusty bread or a grilled cheese sandwich.
