Description

  • Caster Sugar (50g): Sweetens the dough.
  • Ground Almonds (100g): Provides a nutty flavor and crumbly texture.
  • Plain Flour (150g): The base of the cookie dough.
  • Vanilla Extract (1 tsp): Enhances the overall flavor.
  • Powdered Sugar (for coating, about 100g): For the signature snowy look.

Instructions

Step 1: Preheat the oven

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2: Cream the butter and sugar

In a mixing bowl, beat the softened butter and caster sugar together using an electric hand whisk or stand mixer until light and fluffy.

Step 3: Add the vanilla and almonds

Stir in the vanilla extract and ground almonds, mixing until well combined.

Step 4: Incorporate the flour

Gradually add the plain flour and mix until the dough comes together. It should be soft but not sticky.

Step 5: Shape the cookies

Take small portions of dough and roll them into balls, about the size of a walnut. Place the balls on the prepared baking tray, spacing them slightly apart.

Step 6: Bake the cookies

Bake in the preheated oven for 12-15 minutes, or until the cookies are just set and slightly golden on the bottom.

Step 7: Coat in powdered sugar
