Bramble Mousse is a silky and airy fruit-based dessert made by pureeing blackberries, mixing them with whipped cream and egg whites, and chilling until set. The result is a light, fluffy, and flavorful mousse that showcases the natural sweetness and tartness of blackberries.


Ingredients

For the Mousse:

  • Fresh Blackberries (200g / 1 ½ cups, plus extra for garnish) – The key flavor in the mousse.
  • Caster Sugar (75g / ⅓ cup) – Adds sweetness.
  • Lemon Juice (1 tbsp) – Enhances the tartness of the blackberries.
  • Egg Whites (2 large) – Creates a light and airy texture.
  • Double Cream (150ml / ⅔ cup, chilled) – Adds richness and smoothness.
  • Gelatin Powder (1 tsp, or 1 sheet, optional) – Helps set the mousse.
  • Water (2 tbsp, if using gelatin) – To dissolve the gelatin.

For Garnishing:

  • Fresh Blackberries – For an elegant finishing touch.
  • Mint Leaves – Adds color and freshness.
  • Icing Sugar (for dusting, optional) – A delicate sweet finish.

Instructions

Step 1: Prepare the Blackberry Purée

  1. Place the blackberries, sugar, and lemon juice in a blender or food processor.
  2. Blend until smooth.
  3. Strain the mixture through a fine sieve to remove the seeds, leaving a smooth purée.

Step 2: Prepare the Gelatin (If Using)

  1. If using gelatin, sprinkle 1 tsp gelatin powder over 2 tbsp water in a small saucepan.
  2. Let it sit for 5 minutes until it blooms, then gently heat until dissolved.
  3. Stir the gelatin into the blackberry purée and mix well.

Step 3: Whip the Cream and Egg Whites

  1. In a mixing bowl, whip the double cream until it forms soft peaks. Set aside.
  2. In a separate clean bowl, whisk the egg whites until they form stiff peaks.

Step 4: Combine Everything

  1. Gently fold the blackberry purée into the whipped cream, mixing until smooth.
  2. Carefully fold in the whisked egg whites, using a gentle folding motion to keep the mixture airy.

Step 5: Chill the Mousse

  1. Spoon the mousse into serving glasses or ramekins.
  2. Refrigerate for at least 2 hours, or until set.
