Ingredients
- Self-raising flour (225g): Ensures a light and fluffy texture.
- Baking powder (1 teaspoon): Adds extra lift to the scones.
- Butter (50g, chilled and cubed): Adds richness and flakiness.
- Cheddar cheese (100g, grated): Gives the scones their savory flavor.
- Milk (150ml): This helps bind the ingredients together and adds moisture.
- Fresh herbs (2 tablespoons, finely chopped): Parsley, thyme, or chives work well.
- Salt (a pinch): Enhances the overall flavor.
- Egg (for glazing): Optional, adds a golden finish to the scones.
Instructions
Step 1: Preheat the oven
- Preheat your oven to 220°C (200°C fan) or 425°F.
- Lightly grease a baking tray or line it with parchment paper.
Step 2: Mix the dry ingredients
- In a large mixing bowl, sift together the self-raising flour and baking powder.
- Add a pinch of salt and stir to combine.
Step 3: Rub in the butter
- Add the cubed butter to the dry ingredients.
- Using your fingertips, rub the butter into the flour mixture until it resembles fine breadcrumbs.
Step 4: Add the cheese and herbs
- Stir in the grated cheddar cheese and chopped fresh herbs, mixing evenly through the dry mixture.
Step 5: Add the milk
- Make a well in the center of the dry ingredients and gradually pour in the milk.
- Stir gently until the dough comes together. Be careful not to overmix, as this can make the scones dense.
Step 6: Shape the dough
- Turn the dough out onto a lightly floured surface.
- Gently roll it out to about 2cm thick using a rolling pin.
- Use a round cutter to cut out the scones, pressing straight down and lifting to avoid sealing the edges.
Step 7: Glaze and bake
- Place the scones on the prepared baking tray, spacing them slightly apart.
- If desired, brush the tops with beaten egg for a golden finish.
- Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown and well-risen.
Step 8: Serve
- Remove the scones from the oven and let them cool slightly on a wire rack.
- Serve warm with butter or enjoy them as is with your favorite soup or salad.
