Ingredients

For the Chicken:

  • Chicken Breasts or Thighs (2 large, diced) – Tender and juicy.
  • Olive Oil (2 tbsp) – For sautéing.
  • Salt and Black Pepper (to taste) – Enhances flavor.
  • Garlic (2 cloves, minced) – Adds depth to the dish.
  • Paprika (1 tsp, optional) – Gives warmth and color.

For the Orzo Dish:

  • Orzo Pasta (200g) – A small rice-shaped pasta that absorbs flavors beautifully.
  • Chicken Stock (500ml) – Creates a rich base.
  • Tomatoes (2 large, chopped or 1 cup cherry tomatoes, halved) – Adds freshness.
  • Tomato Paste (1 tbsp) – Deepens the tomato flavor.
  • Lemon Zest (1 tsp, optional) – Adds brightness.
  • Dried Oregano (1 tsp) – A classic Mediterranean herb.
  • Fresh Basil (A handful, chopped, optional) – Adds freshness.
  • Parmesan Cheese (50g, grated, optional) – For a creamy, cheesy touch.

Optional Additions:

  • Spinach (1 cup, chopped) – Adds a healthy twist.
  • Feta Cheese (50g, crumbled) – For a salty, tangy finish.
  • Chili Flakes (½ tsp) – If you like a bit of heat.

Instructions

Step 1: Cook the Chicken

  1. Heat 1 tbsp olive oil in a large skillet over medium heat.
  2. Season the chicken pieces with salt, black pepper, and paprika (if using).
  3. Add the chicken to the skillet and cook for 4-5 minutes per side until golden brown and fully cooked.
  4. Remove from the pan and set aside.

Step 2: Sauté the Aromatics

  1. In the same skillet, add another 1 tbsp olive oil.
  2. Sauté the garlic for 30 seconds until fragrant.
  3. Stir in the tomatoes and tomato paste, cooking for 2-3 minutes until slightly softened.

Step 3: Cook the Orzo

  1. Add the orzo pasta to the skillet and stir well to coat in the tomato mixture.
  2. Pour in the chicken stock, season with oregano, and bring to a gentle simmer.
  3. Cook uncovered for 10-12 minutes, stirring occasionally, until the orzo absorbs most of the liquid and becomes tender.

Step 4: Combine Everything

  1. Return the cooked chicken pieces to the pan and stir gently.
  2. Add the lemon zest and basil, mixing everything together.
  3. If using, sprinkle with Parmesan cheese for extra creaminess.
