Description

Mary Berry’s Pavlova Wreath is a meringue-based dessert arranged in a ring shape, mimicking a festive wreath. It features a crisp exterior, and a fluffy interior and is topped with whipped cream and seasonal fruits like berries, kiwi, and pomegranate seeds for a vibrant, show-stopping presentation.


Ingredients

For the Meringue:

  • Egg whites – 6 large, at room temperature, for stability.
  • Caster sugar – 300g, for a glossy and crisp meringue.
  • Cornflour – 1 teaspoon, adds chewiness to the center.
  • White vinegar – 1 teaspoon, stabilizes the meringue.
  • Vanilla extract – 1 teaspoon, for subtle flavor.

For the Topping:

  • Double cream – 400ml, whipped, for the creamy base.
  • Fresh fruits – 300g (e.g., raspberries, strawberries, blueberries, kiwi, and pomegranate seeds), for color and flavor.
  • Mint leaves – Optional, for decoration.
  • Icing sugar – For a light dusting (optional).

Instructions

Step 1: Prepare the Meringue Base

  • Preheat your oven to 150°C (300°F) and line a baking tray with parchment paper.
  • Draw a 10-inch circle on the parchment, then draw a smaller 6-inch circle inside it to guide the wreath shape.

Step 2: Whisk the Egg Whites

  • In a clean, grease-free bowl, whisk the egg whites until soft peaks form.
  • Gradually add the caster sugar, one tablespoon at a time, whisking continuously until the meringue is stiff and glossy.

Step 3: Add the Cornflour and Vinegar

  • Gently fold in the cornflour, white vinegar, and vanilla extract with a spatula.

Step 4: Shape the Wreath

  • Spoon the meringue onto the parchment paper, spreading it evenly to fill the ring shape. Use the back of a spoon to create swirls and peaks for texture.

Step 5: Bake the Wreath

  • Place the tray in the oven and immediately reduce the temperature to 130°C (260°F).
  • Bake for 1 hour, then turn off the oven and leave the meringue inside to cool completely, preferably overnight.

Step 6: Prepare the Topping

  • Whip the double cream until soft peaks form.
  • Wash and slice the fruits, keeping them fresh for assembly.

Step 7: Assemble the Pavlova Wreath

  • Place the cooled meringue wreath on a serving plate.
  • Spoon the whipped cream over the meringue, spreading it evenly.
  • Arrange the fresh fruits decoratively on top, alternating colors for a festive look.
  • Garnish with mint leaves and a dusting of icing sugar if desired.
