Ingredients
- 4 salmon fillets
- 500g new potatoes (halved)
- 1 red onion (sliced)
- 1 red pepper (sliced)
- 1 yellow pepper (sliced)
- 200g cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 2 garlic cloves (minced)
- 1 lemon (cut into wedges)
- Fresh parsley (chopped, for garnish)
- Salt and pepper to taste
Instructions
Step 1: Preheat the Oven
Preheat your oven to 200°C (400°F).
Step 2: Prepare the Vegetables
In a large roasting tray, add the halved new potatoes, sliced red onion, red pepper, yellow pepper, and cherry tomatoes. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and toss everything together to coat the vegetables evenly.
Step 3: Roast the Vegetables
Place the tray of vegetables in the preheated oven and roast for about 20 minutes, or until the potatoes begin to soften and the vegetables start to caramelize.
Step 4: Add the Salmon Fillets
Remove the tray from the oven and make space for the salmon fillets among the vegetables. Drizzle the salmon with the remaining tablespoon of olive oil, balsamic vinegar, and sprinkle with minced garlic. Season the salmon fillets with salt and pepper.
Step 5: Continue Roasting
Return the tray to the oven and roast for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The vegetables should be tender and slightly caramelized.
Step 6: Garnish and Serve
Once cooked, remove the tray from the oven and sprinkle freshly chopped parsley over the salmon and vegetables. Serve the salmon tray bake with lemon wedges for squeezing over the top, adding a bright, zesty finish.
