Step 1: Prepare the sausage filling
- In a mixing bowl, combine the sausage meat, chopped onion, garlic, parsley, and Dijon mustard (if using). Season the mixture with salt and pepper. Mix thoroughly to ensure the flavors are evenly distributed.
Step 2: Roll out the puff pastry
- Preheat your oven to 200°C (400°F). Roll out the puff pastry on a lightly floured surface into a rectangle, about 2-3mm thick. Cut the pastry into long strips, wide enough to enclose the sausage filling.
Step 3: Assemble the sausage rolls
- Place the sausage filling down the center of each puff pastry strip, leaving space on either side for sealing. Fold the pastry over the sausage filling and press the edges together to seal. Use a fork to crimp the edges for a decorative finish.
Step 4: Glaze and cut the rolls
- Brush the tops of the sausage rolls with the beaten egg for a golden finish. Cut each roll into bite-sized portions, about 5cm (2 inches) long, and place them on a baking tray lined with parchment paper.
Step 5: Bake the sausage rolls
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crisp, and the sausage filling is cooked through.
Step 6: Serve
- Remove the sausage rolls from the oven and allow them to cool slightly before serving. Enjoy these Mary Berry Sausage Rolls warm or at room temperature.
