Description

Mary Berry’s Sausage Tray Bake is a hearty meal where sausages and a variety of vegetables, such as potatoes, carrots, and bell peppers, are roasted together in the oven. The result is a dish that’s bursting with flavor as the sausages infuse the vegetables with their juices, while the vegetables become tender and caramelized. It’s a comforting and satisfying meal that’s both simple and flavorful.

Ingredients

  • Sausages (8, pork or your favorite variety): The main protein, full of flavor.
  • Potatoes (500g, baby or cut into wedges): Adds substance to the dish.
  • Carrots (2, cut into thick slices): Adds sweetness and color.
  • Red bell pepper (1, chopped): Brings vibrant color and a slight sweetness.
  • Onions (2, quartered): Adds depth and sweetness when roasted.
  • Olive oil (2 tablespoons): For coating the vegetables and ensuring even roasting.
  • Dried thyme (1 teaspoon): Add a herby note to the dish.
  • Balsamic vinegar (1 tablespoon): Enhances the flavor of the vegetables with a subtle sweetness.
  • Salt and pepper (to taste): For seasoning.

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 200°C (400°F).
  • Line a large baking tray with parchment paper for easy cleanup.

Step 2: Prepare the vegetables

  • In a large mixing bowl, toss the potatoes, carrots, red bell pepper, and onions with olive oil, thyme, balsamic vinegar, salt, and pepper.
  • Ensure the vegetables are evenly coated with the oil and seasoning.

Step 3: Arrange on the tray

  • Spread the vegetables in an even layer on the baking tray.
  • Place the sausages on top of the vegetables, ensuring they are evenly spaced.

Step 4: Bake the tray

  • Place the tray in the preheated oven and bake for 30-35 minutes.
  • Halfway through, give the vegetables a stir and turn the sausages over to ensure even cooking.

Step 5: Check for doneness

  • After 35 minutes, check that the sausages are golden and cooked through, and the vegetables are tender and caramelized.
  • If needed, bake for an additional 5-10 minutes until everything is fully cooked.

Step 6: Serve

  • Once everything is cooked, remove the tray from the oven and let it rest for a few minutes.
  • Serve the sausage tray bake hot, directly from the tray, with a side of fresh salad or crusty bread.
