Mary Berry’s Scotch Pancakes are fluffy, sweet pancakes made with basic ingredients like flour, eggs, milk, and sugar. These small, round pancakes are cooked on a griddle or frying pan until golden brown and traditionally served with butter and jam or syrup. They are also perfect for enjoying tea or coffee.

- 125g self-raising flour
- 1 tbsp caster sugar
- 1 large egg
- 150ml milk
- 1 tbsp melted butter (plus extra for greasing)
- A pinch of salt
Instructions
- Mix the Dry Ingredients: In a large bowl, sift the self-raising flour and add the caster sugar and a pinch of salt. Mix the dry ingredients together.
- Whisk the Wet Ingredients: In a measuring jug, beat the egg and milk together. Gradually whisk the wet mixture into the dry ingredients until smooth. Stir in the melted butter to create a smooth batter.
- Heat the Pan: Heat a non-stick frying pan or griddle over medium heat and lightly grease it with a little butter.
- Cook the Pancakes: Drop tablespoonfuls of the batter onto the hot pan, spacing them apart to allow the batter to spread slightly. Cook the pancakes for 2-3 minutes on each side, or until small bubbles appear on the surface and the edges look set. Flip them over and cook for another 2 minutes until golden brown.
- Serve: Serve the pancakes warm with butter, jam, honey, or syrup, or enjoy them plain with a cup of tea or coffee.
