To make Mary Berry’s Tuscan Chicken (serves 4), gather the following ingredients:

  • 4 boneless, skinless chicken breasts: Tender and lean, perfect for soaking up the creamy sauce.
  • 2 tbsp olive oil: For searing the chicken and sautéing the vegetables.
  • 3 cloves garlic, minced: Adds a fragrant flavor to the sauce.
  • 1 tsp dried oregano: A classic Italian herb that enhances the flavor of the dish.
  • 1 tsp dried basil: For an extra touch of aromatic flavor.
  • 150g (1 cup) sun-dried tomatoes, drained and chopped: Adds tanginess and sweetness to balance the creamy sauce.
  • 200ml (¾ cup) double cream (heavy cream): For the creamy base of the sauce.
  • 75g (¾ cup) Parmesan cheese, grated: Adds richness and a salty, nutty flavor to the sauce.
  • 100g (2 cups) fresh spinach: Adds color and a fresh, healthy element to the dish.
  • Salt and pepper to taste: For seasoning the chicken and sauce.

Instructions

Step 1: Season and Sear the Chicken

  1. Season the chicken breasts on both sides with salt, pepper, and a sprinkle of dried oregano and basil.
  2. Heat the olive oil in a large frying pan or skillet over medium heat.
  3. Add the chicken breasts and sear for 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.

Step 2: Sauté the Garlic and Sun-Dried Tomatoes

  1. In the same pan, add a little more olive oil if needed and sauté the minced garlic for about 1 minute until fragrant.
  2. Add the chopped sun-dried tomatoes and cook for another 2 minutes, stirring occasionally.

Step 3: Make the Creamy Parmesan Sauce

  1. Pour the double cream into the pan with the garlic and sun-dried tomatoes. Stir to combine.
  2. Add the grated Parmesan cheese and continue stirring until the sauce thickens slightly, about 3-4 minutes.

Step 4: Add Spinach and Return Chicken to the Pan

  1. Stir the fresh spinach into the sauce and let it wilt for 1-2 minutes.
  2. Return the seared chicken breasts to the pan, spooning the sauce over the chicken to coat it well.
  3. Let the chicken simmer in the sauce for 2-3 minutes to heat through and absorb the flavors.

Step 5: Serve

  1. Remove from heat and serve the Tuscan chicken hot. Spoon extra sauce over the chicken and garnish with additional grated Parmesan or fresh basil if desired.
