The sausages release their juices, which coat the vegetables, creating a rich, flavorful dish that’s incredibly easy to prepare. It’s a comfort food classic with Nigella’s signature simplicity and style.

  • Sausages (6-8 good-quality beef or your favorite type of sausages): The main protein, adds rich, savory flavor.
  • Baby potatoes (500g, halved): Adds substance and texture to the dish.
  • Red onions (2, quartered): Provides sweetness and depth when roasted.
  • Red bell peppers (2, chopped): Adds vibrant color and sweetness to the tray bake.
  • Olive oil (2 tablespoons): For drizzling and helping everything roast beautifully.
  • Dried thyme (1 teaspoon): For a herby aroma and flavor.
  • Salt and pepper (to taste): Essential for seasoning.

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 220°C (425°F).
  • Line a large baking tray with parchment paper for easy cleanup.

Step 2: Prepare the vegetables

  • In a large mixing bowl, toss the baby potatoes, red onions, and bell peppers with olive oil, dried thyme, salt, and pepper.
  • Make sure the vegetables are evenly coated with oil and seasoning.

Step 3: Arrange the tray

  • Spread the seasoned vegetables in a single layer on the baking tray.
  • Place the sausages on top of the vegetables, ensuring they are spaced apart for even cooking.

Step 4: Bake the tray

  • Place the tray in the preheated oven and roast for 40-45 minutes.
  • Halfway through, give the vegetables a stir and turn the sausages to ensure they cook evenly and get a golden-brown finish.

Step 5: Check for doneness

  • After 45 minutes, check that the sausages are golden and cooked through, and the vegetables are tender and slightly caramelized.
  • If needed, bake for an additional 5-10 minutes until everything is perfectly roasted.

Step 6: Serve

  • Once cooked, remove the tray from the oven and let it rest for a few minutes.
  • Serve the sausage tray baked hot, straight from the tray, with optional sides like a green salad or some crusty bread.
