Nigella’s Semolina Pudding is a traditional dessert made by cooking semolina in milk, sweetened with sugar, and flavored with vanilla or other spices. The result is a smooth and luscious pudding that can be served warm or chilled, often topped with fruit, nuts, or a drizzle of syrup.

Ingredients

  • Milk – 500ml, whole milk for a rich texture.
  • Semolina – 50g, fine semolina works best.
  • Caster sugar – 50g, for sweetness (adjust to taste).
  • Vanilla extract – 1 teaspoon, for flavor.
  • Butter – 10g, optional, adds richness.
  • Toppings – Fresh fruits, nuts, honey, or jam (optional).

Instructions

Step 1: Heat the Milk

  • Pour the milk into a saucepan and place it over medium heat.
  • Add the caster sugar and stir until dissolved.

Step 2: Add the Semolina

  • Gradually sprinkle the semolina into the milk while whisking continuously to prevent lumps.

Step 3: Cook the Pudding

  • Lower the heat and continue stirring for 5–7 minutes, or until the mixture thickens to a creamy consistency.

Step 4: Flavor the Pudding

  • Stir in the vanilla extract and butter (if using) for added flavor and richness.

Step 5: Serve

  • Pour the pudding into serving bowls while warm.
  • Add your favorite toppings, such as fresh fruit, honey, nuts, or a dollop of jam.
