Description

Jamie Oliver’s Rocky Road is a no-bake chocolate dessert made by mixing melted chocolate with marshmallows, crushed biscuits, dried fruit, and nuts. Once set in the fridge, it’s sliced into bars or chunks. It’s a fun and customizable recipe with a perfect balance of textures—crunchy, chewy, and smooth in every bite.


Ingredients

  • 200g dark chocolate (70% cocoa)

  • 100g milk chocolate

  • 125g unsalted butter

  • 3 tbsp golden syrup

  • 100g digestive biscuits or graham crackers, crushed

  • 75g mini marshmallows

  • 50g dried cranberries or raisins

  • 50g chopped nuts (hazelnuts or almonds work well)

  • Optional: 50g popcorn or crushed pretzels for crunch

  • Icing sugar, for dusting (optional)


Instructions

Step 1: Prepare the Tin

  • Line your baking tin with parchment paper, leaving an overhang to help lift out later.

Step 2: Melt the Chocolate Mixture

  • In a heatproof bowl over simmering water, melt the dark chocolate, milk chocolate, butter, and golden syrup together.

  • Stir occasionally until smooth and glossy, then remove from heat and let it cool slightly.

Step 3: Add the Fillings

  • In a large bowl, mix the crushed biscuits, marshmallows, dried fruit, and nuts.

  • Pour in the melted chocolate mixture and stir until everything is well coated.

Step 4: Transfer and Chill

  • Spoon the mixture into the lined tin and press it down evenly.

  • Chill in the fridge for at least 2 hours or until firm.

Step 5: Slice and Serve

  • Once set, lift out of the tin using the parchment paper.

  • Slice into squares or bars. Dust with icing sugar if desired.
