Soda bread is a classic quick bread that uses baking soda instead of yeast as a leavening agent. It has a dense yet soft texture and a slightly tangy flavor due to the buttermilk. This easy-to-make bread requires no kneading or proofing, making it perfect for beginners.

- Plain Flour (500g / 4 cups): The base of the bread.
- Bicarbonate of Soda (1 tsp): The leavening agent.
- Salt (1 tsp): Enhances flavor.
- Buttermilk (400ml / 1¾ cups): Activates the baking soda for rise.
- Optional Seeds or Oats (2 tbsp): For extra texture and flavor.
Instructions
Step 1: Preheat the oven
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
Step 2: Mix the dry ingredients
In a large mixing bowl, combine the flour, bicarbonate of soda, and salt. Stir well to distribute the ingredients evenly.
Step 3: Add the buttermilk
Gradually pour in the buttermilk while stirring with a wooden spoon. Mix until the dough just comes together; it should be slightly sticky but not too wet.
Step 4: Shape the dough
Lightly flour your hands and transfer the dough onto a floured surface. Shape it into a round loaf, being careful not to overwork the dough.
Step 5: Score the bread
Place the dough onto the prepared baking sheet. Using a sharp knife, cut a deep cross into the top—this helps the bread bake evenly.
Step 6: Bake the bread
Bake in the preheated oven for 30-40 minutes, or until the bread has a golden crust and sounds hollow when tapped on the bottom.
