Jamie Oliver’s Sriracha sauce is a homemade version of the popular Southeast Asian hot chili sauce. It’s made from red chilies, garlic, vinegar, sugar, and a pinch of salt — blended into a smooth paste and lightly cooked to intensify the flavor. This version delivers a bold kick, but it’s also rounded out with sweet and tangy notes, making it more than just a spicy topping. Perfect for drizzling, dipping, or stirring into your favorite dishes.

- Red chili peppers (200g) – Choose fresh red jalapeños or bird’s eye chilies for heat.

- White vinegar (½ cup) – Balances the flavor with acidity.

- Sugar (¼ cup) – Gives a subtle sweetness that offsets the heat.

- Salt (1 tsp) – Enhances all the other flavors.

- Water (¼ cup) – Helps in blending and cooking the sauce.

- Tomato paste (1 tbsp, optional) – Adds color and slight thickness (optional if you like a redder hue).
Instructions

Prepare the chilies
Slice the red chilies and remove some or all of the seeds based on your heat preference. -
Blend the base ingredients
Add chilies, garlic, vinegar, water, sugar, and salt to a blender. Process until very smooth. -
Simmer the mixture
Pour the blended mix into a saucepan. Simmer on low-medium heat for about 15-20 minutes, stirring occasionally. -
Adjust flavor and thickness
Taste and adjust salt or sugar. For a thicker sauce, simmer longer or add optional tomato paste. -
Strain for a smooth texture (optional)
Use a fine-mesh strainer if you prefer a silky finish. Push the sauce through with a spoon. -
Cool and store
Let the sauce cool completely, then pour it into sterilized jars or bottles.
