Instructions
Step 1: Sauté the aromatics
Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, and red bell pepper, and sauté for 5-7 minutes until softened.
Step 2: Cook the turkey
Add the ground turkey to the pot. Cook for 5-6 minutes, breaking it up with a spoon, until browned and cooked through.
Step 3: Add the spices
Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for 1 minute to toast the spices and enhance their flavor.
Step 4: Add the tomatoes and stock
Pour in the canned tomatoes, tomato paste, and stock. Stir well to combine. Bring the mixture to a simmer.
Step 5: Add the beans and simmer
Add the kidney beans to the pot. Reduce the heat to low and let the chili simmer for 20-25 minutes, stirring occasionally, until thickened and flavorful.
Step 6: Garnish and serve
Taste the chili and adjust the seasoning as needed. Serve hot with your favorite garnishes, such as cilantro, sour cream, or grated cheese.
